I've been having a ton of issues w/ iTunes 7 myself... in 2 years of heavy mac usage, the only crashes I've seen have been while I've had iTunes 7 open... /me is not amused.
I would seriously suggest people stay the heck away from iTunes 7 until it gets patched.
